Four chairs at the same table
Most people in food safety spend a career in one part of the system. I have worked in four, and the view from each one makes the others legible.
I began as an analytical chemist — a doctorate in analytical chemistry at Karlsruhe, then six years as a scientist at the European Commission's Joint Research Centre in Ispra, developing and validating methods for food authenticity and safety. That was the government research chair: the work of establishing what can actually be measured, and how confidently.
Then industry. At Unilever I ran the program on chemical contaminants in food; at Monsanto I led the globally coordinated regulatory strategy for detection methods across all crops. This was the period of the GMO debate in Europe, which taught me something the science alone could not: that a technically impeccable case can fail entirely because it is delivered in the wrong register to people who are asking a different question.
Then standards. As Senior Director for Food Standards at the U.S. Pharmacopeial Convention, I held responsibility for the Food Chemicals Codex, the leading international compendium of quality standards for food ingredients, and built the scientific work on economically motivated adulteration in the years after the melamine crisis. Standards bodies sit in the strange middle ground between the state and the market, and they are where a great deal of the world's food reality is quietly decided.
And then the United Nations. Since 2015 I have led the food safety program at FAO in Rome, directing a multidisciplinary team of around forty across scientific advice, capacity development and emergency response, and steering the delivery of independent risk assessment that underpins Codex Alimentarius standards. Recent work includes FAO's foresight program and its work on artificial intelligence in food safety.
These four vantage points do not add up to more expertise so much as to a particular kind of double vision. You cannot sit in all four chairs and still believe that a maximum residue limit is a fact about an apple. It is a fact about a committee — one with real consequences, arrived at through a process shaped by evidence, interests, capacity and the particular people who happened to be in the room.
How I work
I bring the questions. The answers we build together.
This is not modesty and it is not indecision. In a field where a standard has to hold across a hundred and eighty-odd countries with genuinely competing interests, nothing that is imposed survives contact with implementation. What survives is what people had a hand in making. Consensus built through open argument is slower to reach and vastly more durable once reached, and building it is most of the actual work.
I also red-team my own positions as a matter of habit — if a criticism of an approach is possible, someone will eventually make it, and it is better to find it ourselves while we can still respond thoughtfully. I would rather be corrected early than defended late.

A note on how I think
I am somewhere on the autism spectrum. In practice this means I work by explicit pattern recognition rather than by intuition — when I read a room, I am matching the configuration in front of me against several thousand stored ones and reasoning forward from the structural similarities. It is slower than the intuitive route and it surfaces things the intuitive route skips. I mention it because it shapes the work rather than sitting beside it: much of what I have written comes from having had to build a map of a world that never came with instructions.
